Here's an easy recipe to make your own dosa mix:
Ingredients:
1 cup of rice (any variety will work)
1/2 cup of red lentils or local bean
Water
Add extra nutrients (our favorite is breadfruit flour) - Gluten-free flour (optional)
Instructions:
Rinse the rice & beans.
Soak them in water overnight at least 12 hours. The fermentation process is crucial for the characteristic flavor and texture of dosa.
After soaking, drain the water and blend the mixture into a smooth batter. Add water as needed to achieve the right consistency.
After fermentation, the dosa batter is ready to use. You can also add gluten-free flour (our favorite is breadfruit flour) to adjust the thickness of the batter, if desired.
To make dosa crepes or waffles, simply heat a non-stick pan or waffle iron, add coconut oil to help from sticking, pour a ladleful of the batter, and spread it in a circular motion. Cook until golden brown, and serve with your favorite chutney, sambar, or filling. The result is a crispy, savory delight that will leave you craving for more.
