SUPER PALM. We go loco for “pejibaye” or peach palm. It is a palm that grows color fruit, you can harvest boil and eat. Peach Palm is great for a food forest because it stacks functions. The timber from the palm is strong and resists termites. When you chop the palm, we can eat the heart of palm in salads. We are not producing peach palm yet, so we purchase it from the local market. We can blend it into creamy sauces, top salads with it, ferment it, make hummus, flour or make it into cervije.

Peach Palm Ceviche
Ingredients:
Add peach palm, add other items if you have on hand like.. Mango, Pineapple, Tomato, Avocado, all cut into small cubes
Add Cilantro, finely chopped (if you have on hand)
Red onion (shallots), cut into small pieces
Lemons
Sea Salt or Himalayan
Preparation:
Mix all the ingredients together
Add lime juice and some salt, to your taste
Let it sit and marinate for about 30 minutes and then serve!
