Tropical Dream Parfait with Chocolate Mousse
2 cups coconut yogurt or fresh blended coconut pulp
10 bananas
Blend until smooth, set aside in big bowl
For making different color layers of parfait, use part of the basic blend and add a colorful fruit, such as berries, pineapple, mango, moringa or chlorella, dragonfruitChocolate Mousse
1 cup raw cacao beans or cacao shell powder1 cup soft, ripe chocolate sapote (sapote negro)
5-7 fresh carao wafers or 1 tbsp carao syrup
1/2 cup soft coconut pulp
4-5 ripe bananas
1 tsp vanilla extract
1/4 tsp cinnamon
1-2 pitted dates or figs (optional for sweeter flavor)
Blend everything until smooth and creamy. Pour into final serving vessels and chill. Garnish with fresh coconut slices or shreds, berries, or other desired fruit topping.
